Buffalo Cauliflower Wings

Every now and then you need to spice things up. Enter: cauliflower. What? Cauliflower? Spicy? Bear with us. Over the years, cauliflower got cool and dressed up as the perfect vegetarian substitute for hot wings. It’s a favorite gameday snack, only full of fiber, Vitamin C, and Vitamin K. Switch up the chicken standard and get those vegetables into your diet more often, or whip up these wings alongside the traditional protein for your vegetarian friends. Directions

  1. Preheat oven to 450 degrees Fahrenheit.
  2. Toss cauliflower florets in 1 cup of the wing sauce. Season with salt and pepper. Roast florets in oven for 20 minutes, basting with extra sauce halfway through.
  3. Serve with blue cheese dressing for dipping, plus fresh celery, carrots & cherry tomatoes.

Cauliflower’s super power? Versatility! Softly boiled, roasted, puréed, sautéed—they’re a low-carb, gluten free, vitamin-packed powerhouse. For a different kind of flour power, substitute cauliflower flour for regular wheat flour. There’s cauliflower pizza crust, cauliflower rice (used for risotto, tabbouleh, couscous, and fried rice dishes), cauliflower bread, cauliflower gnocchi, mashed cauliflower (instead of higher-starch potatoes). Oh, and don’t forget a glorious cauliflower ‘steak’ or vegetarian “wings,” of course!
