Loaded Bacon Cauliflower Mac N Cheese

With its roasted cauliflower florets and rich, creamy cheese sauce, we know it’s hard to improve upon the Cauliflower Mac N Cheese Roast Kit, but we went ahead and did it anyway. And by doing it anyway, we mean adding crispy bacon and some fresh green onions on top for garnish. And better yet, you’re only adding a few small steps (and a few minutes) to an already easy-to-prepare dish, but with a big payoff. Wouldn’t it be better if more things worked like this?

Ingredients

Directions

  1. Heat a skillet over medium heat. Add the bacon slices to the skillet and cook until they are crispy and browned, flipping occasionally. This usually takes about 5-7 minutes.
  2. While the bacon is cooking, prepare the Cauliflower Mac N Cheese according to the instructions on the package, about 20 minutes.
  3. Once the bacon is crispy, remove it from the skillet and place it on a paper towel-lined plate to drain excess grease. Let it cool slightly, then chop or crumble it into small bits.
  4. When the Cauliflower Mac N Cheese is ready, serve it in bowls or on plates. Top the Cauliflower Mac N Cheese with the crispy bacon bits and green onion. Serve immediately and enjoy!

Cauliflower: The New Star of Comfort Foods

Mac and cheese isn’t the only comfort food dish you can whip up with the multi-talented cauliflower. Consider trying out these ideas for even more comfort food swaps:

  1. Cauliflower Pizza Crust: Make a gluten-free and keto-friendly pizza crust using cauliflower rice, cheese, eggs, and seasoning. Bake the crust until crispy, then add your favorite toppings for a delicious homemade pizza.
  2. Cauliflower Mashed Potatoes: This is an old favorite, but still worth mentioning: Swap out some or all of the potatoes in mashed potatoes with steamed cauliflower for a lighter and lower-carb version. Blend the cauliflower with butter, milk, garlic, and your favorite seasonings until smooth and creamy!
  3. Cauliflower Fried Rice: Use cauliflower rice as a substitute for rice in this healthier version of fried rice. Stir-fry the cauliflower with vegetables, eggs, and your choice of protein in a flavorful sauce (soy is always a good choice) for a satisfying and nutritious meal.
  4. Cauliflower Buffalo Wings: We’d be remiss not to mention this tasty recipe featuring our cauliflower florets. Serve with ranch or blue cheese dressing for a tasty vegetarian alternative to traditional buffalo wings.
  5. Cauliflower Shepherd’s Pie: Replace the mashed potato topping in shepherd’s pie with mashed cauliflower for a lighter and lower-carb version of this comforting dish. Layer cooked ground meat and vegetables in a baking dish, top with mashed cauliflower, and bake until golden brown.
  6. Cauliflower Grilled Cheese: Here’s an idea: Use cauliflower “bread” slices instead of bread to make a gluten-free and low-carb grilled cheese sandwich. Fill the sandwich with your favorite cheese and toppings, then grill until the cheese is melted and the cauliflower is golden brown.

These are just a few ideas to get you started, but the possibilities are pretty much endless when it comes to using cauliflower as a substitute in comfort food recipes. So, get creative and enjoy experimenting with this versatile vegetable!
