Bacon Avocado Ranch Salad

This satisfying salad is a meal of its own—bursting with flavor and loaded with protein. Top this salad with seasoned chicken breast, crunchy bacon, grape tomatoes, and buttery sesame crackers. Ingredients

  • 1 Taylor Farms Avocado Ranch Chopped Salad kit
  • 2 slices of bacon
  • 1 chicken breast, sliced
  • 1 Tablespoon Adobo seasoning or other all-purpose seasoning blend
  • ¾ cup sliced grape tomatoes
  • ¾ cup crumbled sesame crackers
  • Dollop of guacamole, optional

Directions

  1. Season a large chicken breast with seasoning, flipping to coat it on both sides. Grill or pan-fry with a bit of olive oil until no longer pink, about 10 minutes, flipping halfway through cooking time.
  2. At the same time, heat a skillet over medium heat. Add the bacon slices to the skillet and cook until they are crispy and browned, flipping occasionally. This usually takes about 5-7 minutes.
  3. While the bacon and chicken are cooking, prepare the Avocado Ranch salad kit, reserving the dressing on the side.
  4. Once the bacon is crispy, remove it from the skillet and place it on a paper towel-lined plate to drain excess grease. Let it cool slightly, then chop or crumble it into small bits.
  5. Slice the chicken breast into slices and cut the grape tomatoes. Crumble the sesame crackers. 
  6. Fill bowls or large plates with the Avocado Ranch salad, and top each one with bacon crumbles, grape tomatoes, sliced chicken, and sesame crackers. Add a dollop of guacamole if desired.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 Tablespoons black sesame seeds
  • 2 Tablespoons olive oil
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, salt, baking powder, and black sesame seeds.
  3. Add the olive oil and water to the dry ingredients. Mix until a dough forms.
  4. Roll out the dough on a floured surface to about 1/8 inch thickness.
  5. Use a knife or cookie cutter to cut the dough into squares or desired shapes.
  6. Place the crackers on the prepared baking sheet and bake for about 15-20 minutes or until golden brown and crispy.
