Blueberry Poppyseed Chicken Croissant Sandwich

Today we’ve gone full picnic vibe and put our delectable new Blueberry Poppyseed Salad into a soft, buttery croissant sandwich. It’s one of our most festive Salad Kits, with leafy green spinach, salty feta cheese, and crunchy red cabbage and shaved carrots that have been sweetened up with a berry poppyseed dressing and—yes, you read the package right—blueberry lemon scone crouton crumbles. (What WILL we think of next?) Enjoy leafy greens with a touch of decadence!

  1. Prep the Croissants
    Using a knife, cut a slit along the top of each croissant (not all the way through). Gently pull out a small amount of the inner dough to create space for filling.
  2. Build the Salad Filling
    In a large bowl, toss the chopped salad kit with the shredded rotisserie chicken. Add the included berry poppyseed dressing and mix until evenly coated.
  3. Assemble
    Stuff each croissant generously with the salad mixture, letting it spill slightly over the top for that full, abundant look.
  4. Finish
    Drizzle a little extra dressing over the top of each croissant.

A daytime staple the world over, a croissant sandwich is a perfectly packable meal for a picnic. This one covers all the bases: greens, fruit, protein, and grains. Even if you’re not picnicking, it’s got the fresh fruit vibes of a pleasant midday nosh. 

The croissant certainly elevates the look from your standard sandwich, and these would make a delightful treat at a brunch party, or look elegant served at a baby or bridal shower.  Serve it with cut fruits or mixed berries (including blueberries, of course). For dessert, consider sticking to the theme with a blueberry tart or blueberry muffins.
