Roasted Caulipops with Pistachio Mint Yogurt Drizzle Recipe

Ingredients

For the CauliPops

For the Pistachio Mint Yogurt Drizzle

  • ¾ cup plain Greek yogurt
  • 1 Tbsp olive oil
  • 1 Tbsp fresh lime juice
  • 2 Tbsp finely chopped pistachios
  • 1 Tbsp finely chopped fresh mint
  • Pinch of salt

For Serving

  • Lime wedges
  • Extra mint leaves
  • Chili flakes, optional

Directions

  1. Roast the CauliPops. Preheat oven to 425°F. Toss the CauliPops with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread onto a parchment-lined baking sheet in a single layer.
  2. Bake Until Crispy. Roast for 20–25 minutes, flipping halfway through, until golden and crisp around the edges.
  3. Make the Yogurt Drizzle. In a small bowl, stir together the Greek yogurt, olive oil, lime juice, chopped pistachios, mint, and salt until combined.
  4. Serve. Transfer the roasted CauliPops to a serving plate and drizzle generously with the pistachio mint yogurt sauce. Finish with extra mint, chili flakes if desired, and lime wedges on the side. Enjoy!
