Discover Elote
Walk around a Mexican town, market, or fair, and you’re bound to find an elote vendor. This south-of-the-border take on corn on the cob is a favorite treat for its mix of creamy, smoky, and spicy flavors. They start by grilling sweet corn until charred. Then, they brush on a creamy layer of mayo, crema, or sour cream and sprinkle it with a crumbly cheese (like cotija). The whole thing is finished with a dusting of chili powder and a squeeze of lime. It’s sweet, tangy, spicy, and irresistible. That’s the flavor we capture in our Mexican Street Corn Chopped Kit, and it also makes for a perfect dip for tortilla chips.
