Mexican Street Corn Chopped Salad Dip

Start with our Mexican Street Corn Chopped Kit—lettuce, shredded broccoli and cabbage, carrots, smoked paprika cornbread crumbles, green onion, crispy corn, and parmesan. Like all of our kits, it’s pre-washed and ready to go. Just chop it up finely, sprinkle on some cotija (or other crumbly cheese) and fresh cilantro, and drizzle on the creamy elote dressing. For some extra heat, add minced jalapeño and a dusting of tajín. Squeeze some lime over it, and start dipping!

Ingredients

  • 1 Taylor Farms Mexican Street Corn Chopped Kit
  • ¼ cup fresh cilantro, finely chopped
  • ⅓ cup cotija cheese (or queso fresco), crumbled
  • 1 jalapeño, seeded and finely minced (optional)
  • A dusting of tajín or chili powder
  • Lime wedges (optional)
  • Tortilla chips, for dipping

Directions

  1. Open the salad kit and chop everything up finely until it becomes dip-like.
  2. Finely chop the cilantro and mince the jalapeño.
  3. Add everything to a large bowl and crumble the cotija over it. Mix in the dressing.
  4. Finish with a squeeze of lime and dusting of tajín if desired.
  5. Serve with tortilla chips and scoop away.
