Strawberry Crisp & Barley Picnic Salad

Who doesn’t love a good strawberry salad, especially when eating outdoors? Here’s one for when you’re dreaming up what you’ll bring to the next picnic or patio potluck. Grab our Strawberry Crisp Chopped Salad Kit, which features a light mix of crisp romaine and kale with crunchy red cabbage and carrots, sliced almonds, salty feta cheese, and dried strawberry-flavored cranberries. Then add fresh, juicy strawberries and the chewy oomph of barley. (Barley provides healthy fiber, complex carbohydrates, and small amounts of plant protein, helping make this light summer salad surprisingly filling.) Drizzle it all with a bright burst of Strawberry White Balsamic Vinaigrette dressing. The combined textures of crispy greens, melt-in-your-mouth strawberries, and hearty barley will have everyone asking for another bowl.

Celebrating Strawberry Salads

We love experimenting with delicious foods on a bright green salad: Grilled stone fruits? Roasted root vegetables? Skewered meats? Cheese of every kind? Yes to all of it.

But let’s take a moment to celebrate the happiest of berries: the tender strawberry. Strawberries on salads are a knockout every time. With their juicy sweetness and vibrant color, they’re an instant boost to any bed of greens.
