Shaved Brussels Sprouts & Peach Salad

Ingredients

For the Salad

For the Dressing

  • 1/4 cup tahini 
  • 2 Tablespoons fresh lemon juice 
  • 2 Tablespoons honey 1 teaspoon Dijon mustard 
  • 1 Tablespoon poppy seeds 
  • 1/4 teaspoon onion powder 
  • Salt and pepper to taste

For the Maple Toppings

  • 1/4 cup maple syrup 
  • 1/4 cup sliced almonds 
  • 2 Tablespoons sunflower seeds

Directions

  1. Using a food processor, shave the Brussels sprouts into thin ribbons. Alternatively, you can use a sharp knife to thinly slice them.
  2. In a bowl, whisk together tahini, fresh lemon juice, honey, Dijon mustard, poppy seeds, onion powder, salt, and pepper until well combined. Adjust seasoning to taste.
  3. In a pan over medium heat, combine maple syrup, sliced almonds, and sunflower seeds. Stir continuously until the mixture is well-coated and the nuts are caramelized. Remove from heat and let it cool.
  4. In a large mixing bowl, combine the Brussels Sprouts with the dressing, and toss.
  5. Top with sliced peaches, sprinkle with maple-glazed nut and seed mixture, and top with crumbled feta.
  6. Plate the salad and serve immediately. Enjoy!
