Summer Spinach Salad with Grilled Corn, Strawberries and Feta

We all love a good strawberry spinach salad — it’s the unofficial salad of summer, after all (source: us.) The typical strawberry spinach salad keeps things fairly simple — fresh strawberries and spinach, some type of white cheese, a tangy vinaigrette, perhaps — but you know what would send that salad into elite levels of summer cuisine? Corn. Specifically, charred/roasted corn. And maybe some almonds for crunch. Okay, and also some creamy feta cheese. Might as well toss on a simple honey dijon vinaigrette to really put it over the top. Hey, look at that: a quick and all-too-easy Summer Spinach Salad that takes just a few minutes and will wildly impress all who are lucky enough to partake. Even if it’s only you.

Ingredients

  • 1 Taylor Farms Spinach
  • 1-quart strawberries, sliced
  • ¾ cup feta
  • ¾ cup smoked almonds
  • 1 cup charred corn

Dressing:

  • 1 tablespoon honey
  • 2 tablespoons dijon mustard
  • 1/3c red wine vinegar
  • ½c olive oil
  • 1 shallot, minced
  • Salt & pepper

Directions

  1. In a small bowl whisk together honey, Dijon, vinegar and shallot until emulsified. Season with salt and pepper.
  2. In a large bowl toss together Taylor Farms Spinach, strawberries, feta, smoked almonds and corn. Add dressing, toss, serve, and enjoy!

More Protein, Anyone?

This Summer Spinach Salad is already way too easy, but if you’re looking to turn your Summer Spinach Salad into more of a main course, you can instantly bulk it up with a little extra protein while still keeping things light and fresh. Grilled chicken is always a solid choice, but if you’ve got steak, shrimp, or salmon on hand, go for it. The sweetness from the strawberries and corn pairs really well with smoky or savory proteins, so it’s hard to go wrong with any of them (even if you try, but why would you do that?). 

Keeping it within vegetarian boundaries? Chickpeas, hard-boiled eggs, or even pan-seared halloumi are all great options that play nicely with the salty feta and crunchy almonds already in the mix. Honestly, this salad does a lot of the heavy lifting on flavor — you just need to top it off with whatever you’ve got in the fridge and you’re good to go. Ah, summer.
