Spiced Apple Baked Salad

Mixing cinnamon-puffed apples, honey-roasted mini chips, and creamy smoked gouda into a base of crisp cabbage, romaine, and shredded broccoli, our Spiced Apple Salad is already autumn-inspired. The vinaigrette is tangy like an apple orchard, the cinnamon apples are sweet like apple pie, and the Gouda is smoky like a warm fire.

Serve this recipe alongside a hearty autumn roast or as a sweet complement to a bowl of chili or butternut squash soup.

Ingredients

  • 1 Taylor Farms Spiced Apple Chopped Salad Kit
  • ½ cup fresh pomegranate seeds
  • 4 medium firm apples (Honeycrisp or Fuji)
  • 2 Tablespoons unsalted butter, softened
  • 2 Tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • Pinch of salt

Directions

  1. Preheat oven to 375°F.
  2. Core each apple carefully, leaving the bottom intact to form a “cup.” Place apples in a small baking dish.
  3. In a small bowl, combine the softened butter, brown sugar, cinnamon, nutmeg, cardamom, and salt.
  4. Spoon the mixture evenly into the center of each apple.
  5. Pour ½ cup hot water into the bottom of the baking dish (to prevent scorching). Cover loosely with foil and bake for 25 minutes.
  6. Remove foil and bake another 15–20 minutes, until apples are tender but still hold their shape.
  7. Meanwhile, prepare the Taylor Farms Spiced Apple Chopped Salad Kit according to package directions. Spread salad onto a large serving platter.
  8. Place warm baked apples on top of the salad bed. Sprinkle generously with pomegranate seeds for a pop of color and tartness.
