Ingredients
- 1 Taylor Farms Protein Southwest Chopped Salad Kit
- 4–5 oz boneless, skinless chicken breast
- ½ cup corn (fresh, grilled, or thawed frozen)
- Olive oil
- ½ tsp chili powder
- ¼ tsp cumin
- ¼ tsp garlic powder
- Salt & pepper
- Optional toppings: sliced avocado, lime wedge, chopped cilantro
Directions
- Brush chicken with olive oil and season with chili powder, cumin, garlic powder, salt, and pepper.
- Grill (or use a grill pan) over medium-high heat for 5–6 minutes per side, until cooked through. Rest 5 minutes, then slice or chop.
- If using fresh corn: grill directly until lightly charred, then cut kernels from the cob. If using frozen or canned: sauté in a hot skillet with a little olive oil until warmed and lightly caramelized.
- Add greens from the Southwest Power Salad Kit to a large bowl. Toss with the included dressing. Sprinkle in the kit’s protein toppings and crunch.
- Top with grilled chicken and corn. Add avocado, cilantro, or a squeeze of lime if you’re feeling extra.
