Roasted Cauliflower Green Goddess Salad


We happen to believe that our Green Goddess Chopped Salad Kit is pretty much absolutely perfect. After all, how can you improve upon a mix of fresh romaine lettuce, red and green cabbage, broccoli, and carrots topped with plant-based butter crouton crumbles, crisp lentils, and our zesty plant-based green goddess dressing? 

Well, how about throwing some roasted cauliflower into the mix? Believe us, this is delicious. The blend of seasonings (cumin, ginger, and cinnamon) come together to create a vibrant and savory flavor that perfectly compliments the crispy-yet-tender texture of the roasted cauliflower, which happens to be right at home on top of a prepared Green Goddess Chopped Salad Kit. Add some sliced avocado for a dose of healthy fats and smooth texture. 




  1. Preheat oven to 425 F. Toss the cauliflower in a bowl with cumin, cinnamon, ginger, salt, and pepper. Roast on a baking sheet for 20 minutes, turning halfway through, until the cauliflower is golden brown. Remove from the pan.
  2. Assemble the chopped salad kit with toppings and green goddess dressing. Top with roasted cauliflower and sliced avocado. Enjoy!

Cauliflower Rice

If you’re on a low-carb meal plan and really missing rice, or just looking for more ways to get some veggies in your life, cauliflower rice is truly a revelation. You can “rice” cauliflower in a food processor and then either steam it or cook it in a pan to give it a firmer texture that resembles grain rice. Feel free to add in whatever seasonings you prefer — in most cases, a little salt, pepper, and butter will do the trick.
