Roasted Cauliflower Green Goddess Salad

We happen to believe that our Green Goddess Chopped Salad Kit is pretty much absolutely perfect. After all, how can you improve upon a mix of fresh romaine lettuce, red and green cabbage, broccoli, and carrots topped with plant-based butter crouton crumbles, crisp lentils, and our zesty plant-based green goddess dressing?

Well, how about throwing some roasted cauliflower into the mix? Believe us, this is delicious. The blend of seasonings (cumin, ginger, and cinnamon) come together to create a vibrant and savory flavor that perfectly compliments the crispy-yet-tender texture of the roasted cauliflower, which happens to be right at home on top of a prepared Green Goddess Chopped Salad Kit. Add some sliced avocado for a dose of healthy fats and smooth texture.

The Many Talents of Cauliflower

In case you haven’t noticed lately, people really seem to be catching onto how versatile cauliflower can be as a substitute for a wide range of other foods. Whether you’re trying to cut carbs or replace meat dishes with a plant-based version, cauliflower is always up for the challenge.

Here are just a few inspiringly genius ways to use cauliflower:

Mashed Cauliflower

This is a great way to enjoy a classic comfort dish with a fraction of the carbs. You can use either steamed or boiled cauliflower that’s been cut up into chunks and quickly turn it into a big batch of mashed cauliflower by mashing it up manually or by using a food processor. Place the mashed cauliflower goodness into a bowl, add salt, pepper, butter, and whatever else you’d like (such as bacon bits, green onion, heavy whipping cream, garlic, etc.), and you’re all set. This Taylor Farms recipe for Garlic Mashed Cauliflower uses our Cauliflower pearls, so you’re one step closer to a hot bowl of the creamiest side dish ever.

Buffalo Cauliflower

Buffalo sauce goes with pretty much anything, and cauliflower is no different. Whether you’re making cauliflower buffalo wings or creating a filling for tacos, you’ll be amazed at the flavor and texture.

In fact, we have a few recipes you should check out:

Cauliflower Rice

If you’re on a low-carb meal plan and really missing rice, or just looking for more ways to get some veggies in your life, cauliflower rice is truly a revelation. You can “rice” cauliflower in a food processor and then either steam it or cook it in a pan to give it a firmer texture that resembles grain rice. Feel free to add in whatever seasonings you prefer — in most cases, a little salt, pepper, and butter will do the trick. You can also make delicious low-carb fried rice by adding in scallions, egg, soy sauce, and garlic.
