Preheat oven to 425 degrees. Chop the cauliflower into medium florets and add to a medium bowl. Add olive oil and a pinch of salt and black pepper. Toss to coat the florets. Spread the florets evenly on a baking sheet. Bake for 20 minutes. While the cauliflower is roasting you may char the tortillas if desired. Once charred, wrap tortillas in tin foil to keep warm.
Remove florets from oven and return to the same medium bowl. Add buffalo sauce and toss to evenly coat. Return baking sheet to oven and bake for an additional 5 minutes.
Assemble tacos by adding iceberg lettuce, red cabbage, carrots, and buffalo cauliflower to tortilla. Top with croutons, cheddar cheese, and buttermilk ranch dressing from the Taylor Farms Cheesy Ranch Salad Kit. Serve immediately and enjoy!
