1. Preheat oven to 425 degrees. Spray cups of a standard size 12-cup muffin tin with non-stick cooking spray.
2. Using a circle cookie cutter cut 2 medium circles out of each tortilla. Press each tortilla circle into a muffin cup. Bake for 10-12 minutes until tortilla cup is toasted and holds its shape.
3. In a large mixing bowl toss black beans, avocado, chopped tomatoes and just the salad base and dressing of the Taylor Farms Avocado Ranch Chopped Kit. Divide the toss mixture between the 12 tortilla cups. Top with cheese and corn from the kit. Serve and enjoy!
