Ingredients
- 1 (10.6 oz) Taylor Farms Apple Feta Salad Kit
- 1 (15 oz) can chickpeas, drained, rinsed, and patted dry
- 1 Tbsp olive oil
- 1 tsp maple syrup (optional, for sweetness)
- ½ tsp ground cinnamon
- ¼ tsp smoked paprika (optional, for balance)
- Pinch sea salt
- 1–2 ripe Fuyu persimmons, thinly sliced (peel optional)
Directions
- Preheat oven (or air fryer) to 400°F.
- Toss chickpeas with olive oil, maple syrup, cinnamon, paprika, and salt. Spread evenly on a parchment-lined baking sheet.
- Roast for 18–20 minutes, shaking halfway through, until golden and crispy. Let cool slightly—they’ll continue to crisp as they cool.
- In a large bowl, combine the salad base from the Taylor Farms Apple Feta Salad Kit. Toss with the included dressing and toppings.
- Layer with roasted chickpeas and sliced persimmons.
- Optional: Finish with a drizzle of extra virgin olive oil or a light sprinkle of cinnamon for a warm touch.

They’re mildly sweet with notes of honey, cinnamon, and brown sugar—perfect for fall meals. They can be crisp like an apple, but will also soften with time—either way is yummy!
Other varieties, like Hachiya and American persimmons, are astringent, meaning they’re chalky and bitter if not ripe. As they soften, they become quite sweet, with honey and caramel notes. However, their jelly-like texture makes them more suited for purees.
