Our Cauliflower Mac ‘n Cheese Roast Kit offers up all the mac and cheese flavors you’ve come to love but in a veggie version (and with significantly fewer carbs). Simply roast your cauliflower and combine with the included cheese sauce mix to create an irresistible side dish that’s about to become your new favorite.

 

This convenient, pre-prepped mac and cheese dish is ready in under 25 minutes, and most of that time is spent doing something else while the cauliflower cooks. Use this time to prepare other dishes or just pace around in your kitchen as you envision your future self savoring such a cheesy treasure. You can enjoy the Cauliflower Mac ‘n Cheese Roast Kit for lunch or as a snack, too, or as a side dish alongside classic dishes like fried chicken, cornbread, baked beans, and mashed potatoes. 

Cooking instructions:

  1. Preheat the oven to 425°F. Toss cauliflower in 1 TBSP of oil and spread into a single layer on a lined baking sheet. Roast for 20 min, tossing halfway. Set aside.
  2. In a medium saucepan, whisk together cheese mix and 1/2 cup milk until combined. Add in 2 TBSP cubed butter and apply medium to medium-low heat. Gently stir until butter is melted and incorporated. Stirring occasionally, let thicken until bubbly, then reduce heat and simmer on low for 2 min.
  3. Remove from heat and pour over roasted cauliflower, tossing lightly to evenly coat florets. Remove, add to plate, and enjoy!

Alternative Cauliflower Cooking Instructions:

  1. Place cauliflower in a steam basket in a pot with enough water to cover the bottom.
  2. Place lid on pan, bring to a simmer, and steam until cauliflower reaches desired texture, 5-6 min for tender-crisp texture or 7-9 min for a softer texture. Drain and set aside.
  3. Continue the sauce instructions above.
