High-Protein Cottage Cheese Tacos with Southwest Chicken & Avocado

Have you heard about that whole “150 grams of protein a day” thing that trainers at the gym tell you about? As fresh veggie fans, we weren’t sure it was possible. But then we came upon these carb-free tacos with extra protein! We’ll walk you through how to make these alternatives to traditional taco shells, which you’ll be loading with our new Protein Southwest Chopped Salad Kit, chicken breast, and the healthy fat of avocado. Bonus: the salad is topped with whey-protein-infused Southwest Ranch Dressing. Enjoy this twist on a classic because these tacos do some heavy lifting.

For the Cottage Cheese Taco Shells: 

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper. 
  2. In a blender or mixing bowl, blend cottage cheese and egg white until smooth. 
  3. Spoon mixture into two thin rounds on the parchment (about 5–6 inches wide). Sprinkle Parmesan evenly over the tops. 
  4. Bake for 12–15 minutes, until set and lightly golden at the edges. 
  5. Remove from oven and let cool slightly, then gently lift and fold over a spoon handle or taco rack to form taco shells. Let cool to crisp. 

For the salad taco filling: 

  1. Toss the greens from the Salad Kit with the included toppings and dressing. 
  2. Warm diced grilled chicken, if desired. 
  3. Fill each cottage cheese shell with the Southwest salad mix. Top with grilled chicken and avocado slices.
