What Exactly Is Green Goddess Dressing, Anyway?

Creamy, tangy, and herbaceous, green goddess might not be everyone’s go-to salad dressing, but those who know it love it—and we owe it all to a play. In the early 1920s, chef Philip Roemer of San Francisco’s Palace Hotel created the dressing as a tribute to actor George Arliss and his hit play called—you guessed it—The Green Goddess. But the dressing’s inspiration actually goes back to the reign of King Louis XIII and sauce au vert, which was typically served with eel.

While we won’t give away all our secrets, green goddess usually combines a tangy, creamy base of mayonnaise and sour cream with fresh herbs like chives, parsley, and tarragon. Some chefs add anchovies for an umami burst, as well as lemon, garlic, and pepper. Once you get hooked, you’ll want to use green goddess for all your salads, dips, and marinades. Eel, anyone?
