Fig & Burrata Sweet Kale Salad

Taylor Farms salad kits are delicious and ready to eat straight out of the bag, but they also make the perfect base for some extra gourmet touches. Our Sweet Kale Chopped Salad Kit is bursting with superfoods—broccoli, Brussels sprouts, radicchio, cranberries, pumpkin seeds, and, of course, kale. Now it’s time to layer on chewy sweetness with fresh figs, add crunch with sliced almonds, and top it off with the “wow” factor: creamy burrata cheese. Drizzle on the poppyseed dressing, and you’ve got a lively, nutrient-rich mix of flavors and textures. This salad definitely has main dish energy.

Burrata vs. Mozzarella—What’s the Difference?

If your only experience with Italian cheeses is pre-shredded mozzarella or grated parmesan, you’re missing out on one of life’s greatest pleasures! Don’t be intimidated by the supermarket’s “fancy cheese” section—it’s the easiest way to take your salad, pasta, or pizza to the next level once you know what you’re looking for.

Fresh, traditional mozzarella and burrata are closely related, with a few differences. Fresh mozzarella is made from Italian ‘buffalo milk’ (latte di bufala) and comes in a ball. When sliced, it has a smooth, springy texture. Burrata is basically a variation on the original. It has an outer skin of mozzarella that is filled with stracciatella—shredded mozzarella that has been soaked in cream. These “little rags” give burrata a soft, buttery inside, adding a rich creaminess that perfectly complements salad greens. Mangiamo!
