Dill Pickle Salad with Honey Mustard Chicken

Ingredients

Honey Mustard Chicken Marinade:

  • 1/4 cup coarse ground Dijon mustard
  • 1 tsp minced garlic
  • 3 Tbsp honey
  • 2 Tbsp olive oil
  • 2 Tbsp chopped fresh rosemary
  • 1 Tbsp freshly squeezed lemon juice

Directions

  1. In a large mixing bowl, combine all the marinade ingredients. Place inside a large ziplock bag. Add chicken breasts to the marinade. Place in the fridge for at least an hour or overnight.
  2. Once the chicken has marinated, sprinkle with salt. Preheat grill to medium heat. Brush grill with oil to prevent sticking.
  3. Place chicken on the grill. Cook for approximately 5–6 minutes per side. The internal temperature of the chicken should reach 165°F. Remove chicken from grill and let rest for 5 minutes.
  4. Slice the chicken and serve on top of the prepared Dill Pickle Chopped Salad Kit and enjoy!
