Sunflower Crunch Grain Salad Recipe

  1. Drizzle the olive oil on 1” cubed sweet potato and season to preference. Cook at 425 degrees Fahrenheit, tossing the sweet potatoes every 10-15 minutes. Let cool slightly.
  2. Cook the quinoa to brand suggestion and let cool slightly.
  3. Shred/finely chop the cabbage, and cut the cucumber into bite-sized pieces. 
  4. Assemble the Chopped Kit with dressing and toppings. Add cabbage and cucumber. Mix together. 
  5. Top with sweet potatoes, quinoa, and crumbled goat cheese.
