Ingredients
- 1 Taylor Farms Sunflower Crunch Chopped Salad Kit
- 1 sweet potato
- 1 cup shredded red cabbage (for extra crunch)
- 1 cup cubed cucumber
- Goat cheese for creamy taste
- ½ cup of quinoa
Directions
- Drizzle the olive oil on 1” cubed sweet potato and season to preference. Cook at 425 degrees Fahrenheit, tossing the sweet potatoes every 10-15 minutes. Let cool slightly.
- Cook the quinoa to brand suggestion and let cool slightly.
- Shred/finely chop the cabbage, and cut the cucumber into bite-sized pieces.
- Assemble the Chopped Kit with dressing and toppings. Add cabbage and cucumber. Mix together.
- Top with sweet potatoes, quinoa, and crumbled goat cheese.
