The Nutritional Benefits of Cauliflower
Cauliflower is that cruciferous cousin of cabbages and broccoli, but it has a flavor and nutritional profile all its own. Tossing raw or roasted cauliflower into salads is a jolt to the nutrients in your bowl—here are the top benefits of eating cauliflower.
- High in Fiber
One cup of cauliflower contains about 3 grams of fiber, meaning these little bites actually aid in digestive health, make you feel fuller, and help regulate blood sugar. - Vitamins and Antioxidants
Cauliflower is high in vitamin C, vitamin K, and folate, which support immune health, blood clotting, and cell growth. It also contains powerful (but hard to pronounce) antioxidants like glucosinolates and isothiocyanates; these may help reduce inflammation and fight chronic disease. - Low in Calories and Carbs
Cauliflower is ideal for low-calorie and low-carb diets, with only about 25 calories and 5 grams of carbs per cup. - Supports Detoxification
Compounds like sulforaphane (basically a phyto-chemical that fights disease) help stimulate the body’s natural detox enzymes, which in turn help with the removal of toxins in the body. - Promotes Heart Health
Cauliflower’s antioxidant and anti-inflammatory properties, along with fiber and compounds like allicin, contribute to lower cholesterol, improved blood pressure, and overall cardiovascular support.
