  1. Preheat oven to 425°F. Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet.
  2. Roast for 20–25 minutes, flipping halfway through, until golden and tender. Let cool slightly.
  3. Add salad mix, toppings, and dressing from the kit to a large bowl.
