Mediterranean Wellness Salad

We think the Mediterranean Crunch Chopped Salad Kit is completely perfect on its own, but it never hurts to add more ingredients to a salad, right? The combination of radicchio, escarole, endive, broccoli, feta cheese, pita-style chips, and our handcrafted basil balsamic vinaigrette is certainly an ideal combination bursting with Greek-inspired flavors. But if you want to take things even further, we recommend adding some fresh Roma tomatoes, cucumber, and avocado to the mix. In just a minute or two, you can create a delicious Mediterranean-inspired salad that is colorful, full of texture, and incredibly satisfying.

Ingredients

Directions

  1. Slice the avocado, tomato, and cucumber to the desired amount and size (we suggest slicing to half an inch).
  2. Assemble the chopped salad kit in a large bowl. Add the toppings from the package, including the feta cheese and pita-style chips, and drizzle with dressing. Toss.
  3. Add the avocado, tomato, and cucumber. Enjoy!

Avocado in a Mediterranean salad?

Avocados are probably not the first thing you think of when it comes to Greek and Mediterranean food, but that part of the world is currently in an avocado revolution of sorts.

While the Mediterranean may never come close to equalling the avocado production in places like Mexico, Colombia, and Peru, Greece still managed to produce around 9,500 tonnes of avocados in 2020 alone (for those keeping score, that ranks 35th worldwide), with the majority being grown on the island of Crete.

The growing popularity of the delightful green fruit (yes, avocados are a fruit) has had an emerging influence on Greek cuisine—it’s common to see Greek and Mediterranean-inspired salads topped with fresh avocados these days. From Grilled Greek Avocados topped with feta, sun-dried tomatoes, and olives, to serving pitted avocado halves stuffed with cherry tomatoes, olives, feta, dill, and cucumber, the flavors go together like the blue and white on the Greek flag.Don’t forget to sit a little taller knowing that avocados are one of the most nutrient-rich foods on the planet, containing around 20 minerals and vitamins essential to good health. They also contain significant amounts of potassium and folic acid, which can help contribute to better heart health while lowering blood pressure. What’s not to like? Ζήτω αβοκάντο! (That’s “long live the avocado!” in Greek, by the way.)
