Winter Citrus Pomegranate Salad Recipe

This Winter Citrus Pomegranate Salad starts with the green leaf lettuce, red and green cabbage, kale, bacon, carrot, sunflower seeds, and sweet onion dressing found in our beloved Sunflower Crunch Chopped Salad Kit. Added to that, we have an array of tangy citrus fruit, jewel-like pomegranate seeds, peppery radicchio and arugula, and smooth, savory goat cheese. The result? A decadent, refined salad that spans a full spectrum of flavors and also happens to look like it came straight from a magazine cover (seriously, this salad is gorgeous).

  1. Using a paring knife, gently peel and thinly slice the citrus. Set aside for topping with salad. 
  2. Prepare the Sunflower Crunch Chopped Salad Kit on a serving platter. Toss in 1 cup of torn radicchio and arugula to the salad kit. 
  3. Top evenly with sliced citrus, pomegranate seed, and goat cheese crumbles before serving.
