Sweet Kale & BBQ Pork Sliders

Ingredients

  • 1-2 Taylor Farms Sweet Kale Chopped Kit
  • 3- 4 cups of pre-cooked pulled pork (or you can make your own)
  • 1 cup (or more) of your favorite BBQ Sauce
  • 1 package of 12 mini Hawaiian rolls
  • 2 tbsp unsalted butter
  • 1 tbsp parsley, chopped

Directions

  1. Preheat the oven to 350 degrees and lightly spray a baking sheet with non-stick cooking spray.
  2. Split slider buns in half horizontally and place bottoms on a baking sheet (no need to separate; it’s fine to keep them all together!) Set aside.
  3. Combine cooked pulled pork with about 1/2 of your BBQ sauce. If you want sliders a bit more saucy, feel free to add more. Mix until completely coated.
  4. Spread BBQ pork equally across buns, then top with remaining sauce, and place tops on top.
  5. Melt butter, then brush over top of buns and sprinkle with a bit of parsley.
  6. Bake sliders for 10-12 min. Pork is pre-cooked so you are just cooking these to get nice, golden, warmed up buns. Yum.
  7. While sliders are baking, open up your chopped kit(s) and prep the salad, leaving some toppings and dressing separate.
  8. Once done, remove sliders from the oven. Allow to cool a couple minutes, then assemble, adding prepped salad on top of pork. Top with additional toppings and dressing from the kit, as desired.
  9. Serve with slices of watermelon!
