Spiced Chicken and Apple Salad

 

Does anything scream the arrival of fall more than cinnamon-sugar, apples, and great food? Ok, maybe children at recess on their first day of school might scream fall just as much as this recipe. But this is yummier.

Using our Spiced Apple Chopped Salad Kit, this recipe tops this fan favorite with slices of cooked chicken breasts and—get this!—slices of apples that have been sprinkled with cinnamon-sugar. Yep, cinnamon-sugar isn’t just for the messiest type of toast ever, it’s coming along for the ride today.

 

Ingredients

Directions

  1. Season chicken breasts with salt, pepper, paprika, and cinnamon. Then drizzle with olive oil.
  2. Heat oil or butter (or a little of each!) over medium heat. Saute chicken breasts for about 10 minutes on each side, covered with the lid. (You can also bake the chicken breasts in a 350 degree oven for 20-25 minutes.) For a quick shortcut, purchase rotisserie chicken and cut or shred the chicken.
  3. While the chicken is cooking, combine the cinnamon and sugar in a bowl. Slice the apples thinly and sprinkle with the cinnamon and sugar mixture. Set aside.
  4. Slice your cooked chicken breasts to desired thickness.
  5. Assemble Chopped Salad Kit with its dressing and toppings, and top with chicken slices and cinnamon-sugar apple slices. Enjoy!

Honeycrisps are consistently in the top four best-selling apple varieties throughout the year. They’re what Modern Farmer calls the “near-perfect raw apple” because they’re sweet, juicy, and crisp (hence the name). By the way, did you know their crispness comes from the fact that their cells are larger than other apple varieties? They’re big-boned and proud of it!

You may have noticed that they’re also a bit pricier, coming in at 2 to 4 times as much as Galas or Fujis. Most people don’t seem to mind, though, as Honeycrisp apple picking brings in monster crowds and the grocery bushels get picked clean this time of year.
