Salsa Ranch Steak Tacos

What’s better than a taco? That’s easy: a steak taco. Switching up your normal protein with something like a tender flank steak or skirt steak is a fool-proof way to elevate a familiar go-to dish with just a little more oomph. Of course, it doesn’t hurt to add a few more ingredients to the zesty mix — especially when it involves the bold flavors of our Salsa Ranch Chopped Kit, featuring a blend of four cheeses, crunchy tortilla strips, and that creamy salsa ranch dressing.

Add in a quick and easy radish salsa bursting with the perfect amount of brightness to wake everything up, and you’ve got a meal that’s worthy of its own taco truck. And all it took you was what? 15-20 minutes? Yep, go ahead and put this recipe in your monthly rotation.

Ingredients

  • 1 Taylor Farms Salsa Ranch Chopped Kit
  • 2 Tablespoons vegetable oil, divided
  • 1lb skirt or flank steak
  • Kosher salt and freshly ground black pepper
  • ½ cup fresh cilantro leaves with tender stems, divided
  • 4 radishes, trimmed, chopped
  • 2 spring onions or 4 scallions, white and pale-green parts only, thinly sliced
  • ½ serrano chili or jalapeño, seeds removed if desired, finely chopped
  • 2 Tablespoons fresh lime juice
  • 8 corn tortillas, warmed

Directions

  1. Heat 1 Tbsp. oil in a large skillet over high heat. Season steak with salt and pepper and cook about 5 minutes per side for medium-rare. Let steak rest 5 minutes.
  2. While the steak rests, chop half of the cilantro and toss with radishes, onions, chili, lime juice, and remaining 1 Tbsp. oil in a medium bowl. Season the radish salsa with salt and pepper to taste.
  3. In a large bowl, toss Taylor Farms Salsa Ranch Chopped kit with all of the components and dressing.
  4. Thinly slice steak and serve on tortillas topped with the radish salsa, Taylor Farms Salsa Ranch Chopped Kit, and remaining cilantro.

My Tacos are Lonely… What Else Can I Serve With Them?

Steak tacos are a crowd-pleaser on any table, but having the right sides will make your meal even more memorable. A simple pico de gallo made with diced tomatoes, onions, cilantro, and a squeeze of lime is always a must-have. For a hearty side, whip up a batch of Spanish-style rice or cilantro-lime rice to serve alongside the tacos; they’re even better next to some refried beans or black beans.

You could also try roasted or grilled peppers and onions for a smoky-sweet companion — simply drizzle them with olive oil, sprinkle with salt, and cook until slightly charred. Oh, and don’t forget the chips and salsa while you’re waiting for your steak to cook!
