Green Goddess Tacos Recipe

Who doesn’t love a Green Goddess Salad? We’re pretty partial to ours, with its green leaf lettuce, red & savoy cabbage, broccoli, carrot, green onion, vegan butter crouton crumbles, green goddess seasoning, and plant-based green goddess dressing. Yes, indeed, a perfect salad unto itself. 

But can this goddess of green handle tacos? Absolutely. Our culinary friend at Our Balanced Bowl has gifted the world with this super-tasty Green Goddess Tacos Recipe that uses our Green Goddess Chopped Salad Kit, chicken, and salsa verde to create a dazzling plate of tacos you could probably turn around and sell out of a truck — much to the delight of your neighbors. And thanks to an assist from your Instant Pot, you won’t have to wait very long to enjoy them.

Ingredients

  • 1 Taylor Farms Green Goddess Chopped Salad Kit
  • 4-6 corn tortillas
  • 1 lb chicken breast
  • 1 jar salsa verde
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon cracked pepper
  • Your favorite taco toppings (sliced avocado, green onions, jalapenos etc.)

Directions

  1. Place the raw chicken breast, garlic and onion powder, salt and pepper into the Instant Pot. Pour the entire salsa verde jar over top of the chicken. Cook on high pressure for 20 minutes. Release steam valve. Shred. Taste and adjust the seasoning if needed. Set aside.
  2. While the chicken is cooking, place the greens from the Green Goddess Chopped Salad Kit into a large bowl. Add the toppings and half of the dressing (save the other half for topping your tacos!). Mix to combine and set in the fridge.
  3. Slice and dice your favorite taco toppings. I used sliced avocado, green onions, and jalapeno!
  4. Warm the corn tortillas and/or slightly char them using the stove eye! Begin layering your tacos, starting with the roasted garlic salad as the bottom layer. On top, add the salsa verde chicken. Top with your desired toppings! Drizzle with the remaining dressing! Devour immediately! 

Verde Versatility 

This recipe calls for salsa verde, a vibrant green sauce typically made with tomatillos, green chilies, cilantro, onions, garlic, and lime juice. While it’s obviously great in dishes like tacos or simply enjoyed with tortilla chips, salsa verde can lend its fresh, tangy, and slightly spicy flavor to plenty of other culinary uses as well. 

Need some ideas? Try using salsa verde as a marinade for grilled chicken or fish. Its acidity tenderizes the meat while infusing it with a zesty flavor. Drizzle salsa verde over roasted vegetables to add a bright, refreshing finish that wakes your veggies up a bit. It can also be stirred into tons of different soups or stews for an extra layer of flavor, transforming a simple dish into something special.

Not that we want to overlook the deliciousness of green goddess dressing, but it’s not the only green dressing in the scene.
