Apple and Sweet Potato Harvest Salad



  1. Preheat the oven to 450 degrees. Cut the sweet potato in 1” cubes, place on a cookie sheet and toss the sweet potatoes with olive oil and season with salt and pepper. Roast for 30 minutes and flip halfway through at 15 minutes. Once the sweet potatoes are done roasting, set them out to cool.
  2. While the sweet potatoes are cooling, slice the apple in half moon shapes.
  3. Assemble the chopped kit, add the toppings, drizzle the dressing and finish with the apple sliced and roasted sweet potatoes. Enjoy!
