Apple and Sweet Potato Harvest Salad

 

This recipe is perfect for anyone looking to increase their fruit and vegetable intake. While this recipe isn’t vegetarian (glory in the bacon bits), it does serve up a heaping bowl of nutrient-rich foods.

  1. Preheat the oven to 450 degrees. Cut the sweet potato into 1” cubes and place on a cookie sheet. Toss with olive oil and season with salt and pepper. Roast for 30 minutes and flip them halfway through at 15 minutes. Once the sweet potatoes are done roasting, set them out to cool.
  2. While the sweet potatoes are cooling, slice the apple in half moon shapes.
  3. Assemble the Maple Bourbon Bacon Chopped Salad Kit, add the toppings, drizzle the dressing. Serve in bowls or on plates and top the salad with apple slices and roasted sweet potatoes. Enjoy!
