Lemon Parmesan Salmon Salad

The pairing of lemon and fish is a culinary relationship that goes back several centuries, so we figured we’d contribute to the eternal canon of delicious ways to enjoy this magnificent duo. Organic chopped romaine, organic kale, radicchio, parmesan cheese and garlic Romano crouton crumbles, and our bright lemon vinaigrette provide the ideal backdrop for some perfectly pan-seared salmon (and of course a bit of avocado too).

  1. Season salmon filets with salt and black pepper. Heat a large pan on high and add the olive oil. When pan is hot, place salmon filets skin-side down and cook for 2-3 minutes. Gently flip filets and cook for an additional 1-2 minutes. 
  2. In a large bowl, mix the contents of the Organic Lemon Parmesan Chopped Salad Kit.
  3. Top with salmon and sliced or diced avocado. Serve with an optional wedge of lemon to squeeze over salmon filets. Enjoy!
