Veggie-Packed Crunch Salad with Avocado Salad Dressing

No measurements required — add as much or as little of the below ingredients as you’d like.

Creamy Avocado Salad Dressing
(makes roughly 1 cup of dressing)

  • 2 ripe Mission avocados
  • 1/4 cup extra virgin olive oil
  • 1 handful fresh cilantro
  • 1 jalapeño, stem and seeds removed (chopped)
  • 2 garlic cloves (chopped)
  • juice from 2 limes
  • 1 Tbs. honey
  • 2 Tbs. apple cider vinegar
  • 1/4 cup water (for a thicker dressing, do not add water)
  • Sea salt, to taste


Combined all ingredients into a large bowl (adding as much or as little as you’d like), then gently toss. Add salad dressing and salt/pepper to taste. Toss once more to mix well.

For the Dressing:

Combined all ingredients (minus the sea salt) into a food processor and mix until smooth. Lastly, add sea salt to taste.
