Tuscan Kale Salad with Lemon Vinaigrette

1 package Taylor Farms Organic Baby Kale

1 cup pancetta, cooked

1/4 cup cherry tomatoes, whole or sliced

¼ cup toasted pine nuts

1 1/2 oz. Parmesan cheese, shaved


2 Tbsp.  fresh lemon juice

1 garlic cloves, crushed

½ cup extra virgin olive oil

Salt & pepper


In a mixing bowl combine lemon juice, crushed garlic, olive oil, salt and pepper; whisk well.

In a large salad bowl, combine organic baby kale, pancetta, tomatoes, and toasted pine nuts. Drizzle salad with lemon vinaigrette, top with Parmesan cheese and enjoy!
