Sweet Potato Toast with Sunflower Crunch

  1. Preheat oven to 450 degrees Fahrenheit.
  2. Slice sweet potatoes into ½ inch thick coins. Toss in olive oil, salt & pepper. Roast for 20-25min until tender and cooked through.
  3. In a large salad bowl toss Taylor Farms Sunflower Crunch Chopped Kit with all of the components and dressing. Top each sweet potato coin with as much salad as will fit.
