Sweet Pistachio Crusted Salmon Salad

 

Our Sweet Kale Chopped Salad Kit is one of our favorites; it’s vibrant, a tad sweet, and has that touch of cranberries that elevates things like a dancer on her pink toe-shoes. In this recipe, pistachio-crusted salmon sits atop a bed of tender kale, shredded Brussels sprouts, and radicchio, tossed with creamy poppyseed dressing and sprinkled with cranberries and sliced almonds. Not only will this combination of flavors make you smile, this is the perfect recipe for serving dinner guests with confidence.

 

Ingredients

  • 1 Taylor Farms Sweet Kale Chopped Salad Kit
  • 1 lb salmon filet or 3-4 pieces
  • 2 lemons (juiced)
  • 3 tablespoons Dijon mustard
  • 2 teaspoons honey
  • 2 garlic cloves, minced
  • 1 cup ground pistachios and/or sliced almonds
  • 1/2 cup Panko bread crumbs
  • 2 tablespoons olive oil
  • Sliced strawberries
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 400 F. Line a baking sheet with parchment paper. 
  2. Place the salmon, skin side down. Season lightly with salt and cracked black pepper.
  3. In a small bowl, mix together lemon juice, dijon mustard, honey, and garlic. Spread evenly over salmon filet.
  4. In a separate small bowl, mix together pistachios, panko bread crumbs, and olive oil. Press the ‘crusted’ mixture into the salmon filet evenly.
  5. Bake salmon filet for 12-15 minutes or until fish flakes off easily with a fork.
  6. Allow salmon to cool for 5 minutes and place onto the prepared Taylor Farms Sweet Kale Chopped Salad Kit. Top with sliced strawberries.
