Organic Mixed Spring Greens with Fresh Lemon Vinaigrette

1 5 oz. package Taylor Farms Organic Spring Mix

1 cup Taylor Farms Organic Arugula

1 11 oz. can mandarin oranges, drained

2/3 cup chopped walnuts

¼ cup thinly sliced red onion

1 cup cherry tomatoes

3 Tbsp. extra-virgin olive oil

3 tsp. fresh lemon juice

½ tsp. salt

¼ tsp. pepper

Pinch of garlic powder


To make the lemon vinaigrette, whisk together the olive oil, lemon juice, salt, pepper and garlic in a small bowl.

In a large salad bowl toss the Spring Mix and Arugula with lemon vinaigrette. Top with mandarin oranges, walnuts, onion and tomatoes.
