Mediterranean Crunch Chopped Salad With Roasted Chickpeas Recipe

This simple recipe complements our salad kit with a boost of flavor, a bit more protein, and even more crunch from the additions of fresh cherry tomatoes, avocado, and perfectly roasted chickpeas.

  1. Air fry chickpeas at 375 degrees for 15 minutes and season to your liking. While those are cooking, slice the tomatoes and avocado. (If you don’t have an air fryer, you can roast these in the oven for 15 minutes at 400 degrees.)
  2. Assemble the Chopped Kit with the dressing and toppings. 
  3. Finish off by adding the chickpeas, tomatoes, and sliced avocado. Enjoy!

 

What else can I do with chickpeas?

Most people are aware of the starring role chickpeas play in making traditional hummus, and by now, you’re clearly aware that you can roast them. You may even be popping some right now. But what else can you do with these things?

There are probably more uses for chickpeas than you realize. Here are just a few:

  • Toss them into vegetable soups or even puree them to use as an easy and flavorful thickener for the broth. 
  • Use them as a plant-based protein in pasta and rice dishes, particularly those that combine several ingredients in a seasoned mixture. Try pairing them with caramelized onions, fresh herbs, spices, and your choice of vegetables, then toss them with freshly-cooked pasta or rice.
  • Mash them up with a bit of salt and pepper and use as a spread in a sandwich or wrap.
  • Combine roasted (and cooled) chickpeas with raw almonds, dried cranberries, and other snackables for a delightful trail mix.

And here’s a clever trick you may not be aware of just yet: the liquid in a can of chickpeas can be whipped into a froth with vanilla and sugar and used as a plant-based meringue in desserts!
