
4 cups Taylor Farms Italian Blend
2 Roma tomatoes, sliced
2 cups sliced cucumber
1/4 cup pitted black or kalamata olives, halved
1/4 cup red onion, thinly sliced
3 Tbsp. chopped fresh Italian parsley
3 Tbsp. extra-virgin olive oil
1 1/2 Tbsp. red wine vinegar
1/2 tsp. dried oregano
3/4 cup crumbled Feta cheese
Gently mix the sliced tomatoes, cucumber, olives, onion, parsley, olive oil, vinegar and oregano in a mixing bowl. Season with salt and pepper and let marinate in refrigerator for 20 minutes. Place salad in a large salad bowl. Top lettuce with vegetable mixture and Feta cheese, then toss and serve.
