Chopped Romaine Salad with Apple, Pecans and Chicken

Ingredients

  • 7 Cups Taylor Farms Chopped Romaine
  • ¼ cup dried cranberries
  • 1 cup cooked chicken breast, cubed
  • ¼ cup roasted pecans
  • ¼ cup crumbled blue cheese
  • 1 apple, cut into thin slices
  • 1 Tsp Dijon mustard
  • ¼ Cup extra virgin olive oil
  • 2 Tbsp. Honey
  • 2 Tbsp. white wine vinegar
  • Salt and pepper to taste

Directions

1. Make Dressing: combine Dijon mustard, olive oil, honey, white wine vinegar, salt and pepper
2. In serving bowl add chopped Romaine, top with cranberries, chicken, pecans, blue cheese, apple slices
3. Drizzle with dressing
