Chipotle BBQ Chicken Chopped Salad

For chicken marinade

  • 1 – 1.5 Pounds of skinless chicken breasts
  • 1 Cup of barbeque sauce
  • 1 ½ Limes juiced
  • 3 Tablespoons of olive oil
  • 2 Tablespoons of freshly minced garlic
  • 1 Tablespoon of honey or agave nectar
  • ¼ Teaspoon of freshly ground black pepper
  • ¼ Teaspoon of onion powder
  • 2 Teaspoons of canned chipotle adobo sauce
  • 1 Canned chipotle adobo pepper in sauce chopped & seeded

For salad


Place all marinade ingredients into a bowl and let marinate for 30 minutes – 2 hours. Remove chicken breasts from marinade and lightly salt and pepper each side. On a grill or in a cast-iron pan cook chicken for 8-10 minutes or until internal temperature reaches 165 degrees Fahrenheit. Brush with BBQ sauce and continue to cook for one minute.

Chop chicken and avocado and place on top of a Taylor Farms BBQ chopped salad kit. Add in corn kernels and extra pepper if desired.
