Chicken Apple Harvest Salad with Buttermilk Dressing

  • 6 cups Taylor Farms 50/50 Blend
  • 4-6 oz. chicken breasts
  • 1/3 cup dried cranberries
  • 1/4 cup blue cheese
  • 2 apples, sliced
  • 1/2 cup buttermilk
  • 3 Tbsp. mayonnaise
  • 2 Tbsp. Italian parsley, chopped
  • 1 clove garlic, minced
  • salt & pepper


  1. Preheat grill to medium high heat. To prepare chicken breasts, rinse under warm water, dry and season lightly with olive oil, salt, and pepper.
  2. In a large bowl, whisk together the buttermilk, mayonnaise, parsley, garlic, ½ tsp. salt and ¼ tsp. pepper.
  3. Grill chicken breast over medium-high heat until cooked through, 6 to 8 minutes per side or until cooked through; remove from grill.
  4. Add dried cranberries, sliced apples, and crumbled blue cheese to homemade buttermilk dressing; toss. Plate each salad and top with sliced chicken. Serve and Enjoy!
