Preheat grill to medium high heat. To prepare chicken breasts, rinse under warm water, dry and season lightly with olive oil, salt, and pepper.
In a large bowl, whisk together the buttermilk, mayonnaise, parsley, garlic, ½ tsp. salt and ¼ tsp. pepper.
Grill chicken breast over medium-high heat until cooked through, 6 to 8 minutes per side or until cooked through; remove from grill.
Add dried cranberries, sliced apples, and crumbled blue cheese to homemade buttermilk dressing; toss. Plate each salad and top with sliced chicken. Serve and Enjoy!
