3 tbsp. extra-virgin olive oil
1 tsp. red wine vinegar
2 – ¾ inch thick slice of Ciabatta
1 ripe tomato, cut into ½ inch slices
1 garlic clove
8 thin slices of prosciutto
4 oz. Mozzarella cheese
Heat a Panini press according to manufacturer’s directions. In a medium bowl, toss the arugula with 1 Tbsp. extra-virgin olive oil, vinegar and dash of salt & pepper.
Set the 4 Ciabatta slices on a cutting board and rub each side with garlic clove. Top the bottom two slices with cheese, prosciutto, tomato, and arugula mixture. Close sandwich with remaining bread slice.
Place the sandwiches on the press and cook until browned, about 5-7 minutes. Serve warm.
