30 Minute Shrimp Burrito Bowl

Optional

  • 4 oz cotija cheese to sprinkle on top when done
  • 1 lime to cut into wedges to serve with
  • Black beans
  • Corn
  • Cilantro
  • Cherry tomatoes

Directions

  1. In an 8 X 11 baking dish shrimp and toss in the juice of 1 lime and pour over the top of the shrimp. Flip over the shrimps to coat with the lime juice.
  2. In a small bowl whisk together the salt, cumin and paprika. Then sprinkle both sides of the shrimps with the seasoning, rubbing it in with your hands.
  3. In frying pan heat 1 tbsp of olive oil on medium heat for 1 minute. Add the shrimp, cook for about 2 minutes on each side until they turn white/pink and are opaque. Then set the shrimp on a plate while you cook the Taylor Farms Southwest meal kit per the instructions on the bag in same frying pan.
  4. Then lastly, I add the cotija cheese in to have it melt over the rice and veggies.
  5. Plate the delicious Southwest Rice mixture onto a plate with the delicious shrimp on top. Sprinkle with more cotija cheese, black beans, corn, tomatoes and fresh cilantro and serve with a lime wedge. Enjoy!
