Hi! My name is Lindsey from @lindseyeatsla! I am all about easy, quick and simple meals and that can be seen throughout my blog and Instagram. I try to find the best ways to cook quickly and efficiently, where still keeping the quality and taste in my food. When I work all day, sometimes it hard to even put lunch in and it’s sometimes difficult to put a lot of time into dinner so I love to find an easy way to create and finish dishes.
Today, we are going to be making this easy Steak Taco Bowl using the new Taylor Farms Salsa Ranch Chopped Salad Kit! It includes everything you need for the perfect salad: a creamy salsa dressing, assortment of greens like cabbage and kale, it includes carrots, tortilla strips and cheese. Just pour out of the bag, toss and serve.
For the taco salad, I cubed and seared some steak for extra protein and topped with herbs. I love adding all types of herbs to my salads because it adds even more color and freshness (like dill and basil).
Add on your dressing (I add a lot!), mix and enjoy!
Steak Taco Bowl
1 Taylor Farms Salsa Ranch Chopped Kit
New York Strip Steak (about 1 lb – can also use any steak you prefer)
1 cup assorted rainbow mini tomatoes
1/2 cup assorted herbs
1/2 cup yellow corn
1/2 cup blanched snap peas
Begin by prepping your ingredients: slice your tomatoes in half, wash your herbs, shred your corn and blanch your snap peas.
Remove components from your salad kit.
Next heat a skillet with oil. Take your steak and cube it up. Toss in the hot skillet and brown on all sides for about 2-3 minutes on each side. Season with salt and pepper.
Assemble your salad by placing in all your salad kit components tomatoes, herbs, corn and snap peas. Top with steak, dressing and serve!

More time spent with friends and family, less time prepping food.
Easy Meal Hack #3 – Taco Tuesday with Taylor Farms Taylor Farms also comes to the rescue for our Taco Tuesday nights. All you have to do is sauté beef or chicken and either do a Taco Salad or Tacos with their Avocado Ranch Chopped Kit or their new Salsa Ranch Chopped Kit. I just added some fresh salsa and tortillas because the kits have all you need with dressing, cheese, corn and lettuce blend. No chopping necessary, it’s the easiest taco night I’ve done and one of my hacks for how to throw a fiesta in under and hour and under $200.
Easy Meal Hack #4: Citrus Shrimp Salad I am always looking for light & refreshing recipes to make for dinner. When Taylor Farms launched their new Tangerine Crunch Chopped Kit earlier this summer, I was instantly inspired to whip up a fun summer salad. Grab the recipe for this tasty Citrus Shrimp Salad.
Whisk olive oil, orange and lemon juice, garlic, onion, 1/2 of parsley, and red pepper flakes in a bowl. Pour into large skillet on medium heat and let simmer. Add shrimp and season with salt, pepper and garlic salt. Cook until shrimp turns pink or just sauce for 5 minutes if using cooked shrimp to absorb flavor. Add the lemon and orange slices to the mixture. Top with remaining parsley.

Serve both together on plate.

Our Taylor Farms team (including our new and beloved Earthbound Farm members) recently attended the 4th annual Organic Produce Summit, a food show exclusive to all things organic. As a founding sponsor of this summit, we hosted retailer tours at our processing facility, participated in one of the breakout session educational panels, and joined other produce companies showcasing their latest organic offerings. Buyers and suppliers had the opportunity to visit Taylor Farms’ processing facility for a sneak peek of how your favorite organic products are created. We hosted two groups who were able to ask our team questions regarding organics and our products, along with an exclusive tour of our retail facility in Salinas, followed by a lunch featuring our Organic Mediterranean Chopped Salad Kit.
This was the first time the Taylor Farms and Earthbound Farm brands have been showcased as one organization since the acquisition in April, bringing Earthbound Farm back to their roots as a family owned company in the Salinas Valley.
Our very own Micah Shea, Vice President of Sales sat on The Future of Organic Meals at Retail and shared many insights with the crowd.
“When it comes to product planning, our inspiration definitely comes from white tablecloth locations, but we also glean a lot of information from consumer feedback and research we conduct directly,” Micah said. “Even looking at a resource like recipes that are proliferating on Instagram is amazing. Salad was never really my friend until I started trying Taylor Farms Chopped Salad Kits! Not only are they delicious, they literally pack everything you need (already chopped!!) in there for you so the most effort you have to put in is simply mixing it up! Yes please! While I’m basically obsessed with every single flavor, this new Roasted Garlic Chopped Salad Kit is 100% my new favorite. It’s crunchy, filled with nutritious greens and is loaded with the caramelized deliciously roasted garlic flavor that we all know and love!
If you have ever been to my blog, you know I’m also obsessed with tacos – so I knew immediately that I wanted to incorporate the Roasted Garlic Kit into my weekly taco night! It makes the perfect “slaw” base for the taco! It’s creamy, crunchy, light and delicious. And don’t forget about saving some of the extra creamy Roasted Garlic Dressing to act as a crema to drizzle on top of your tacos. I’ve officially dubbed this recipe Roasted Garlic Green Goddess Tacos because they are absolutely loaded with all things green and garlic! Add in a delicious protein like Salsa Verde Chicken, pile everything into a deliciously charred corn tortilla and garnish with your favorite taco toppings like avocado, lime and green onions! You’re all set for a powerhouse dinner in under 30 minutes!

1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, ½ tsp cracked pepper
Your favorite taco toppings (sliced avocado, green onions, jalapenos etc.)
Place the raw chicken breast, garlic and onion powder, salt and pepper into the Instant Pot. Pour the entire salsa verde jar over top of the chicken. Cook on high pressure for 20 minutes. Release steam valve. Shred. Taste and adjust the seasoning if needed. Set aside.
While the chicken is cooking, place the greens from the Roasted Garlic Salad Kit into a large bowl. Add smoked white cheddar cheese, half of the croutons and half of the garlic dressing (save the other half for topping your tacos!). Mix to combine and set in the fridge.
Slice and dice your favorite taco toppings. I used sliced avocado, green onions, and jalapeno!
Warm the corn tortillas and/or slightly char them using the stove eye! Begin layering your tacos, starting with the roasted garlic salad as the bottom layer. On top, add the salsa verde chicken. Top with your desired toppings! Garnish with the extra croutons and a drizzle of the creamy garlic dressing! Devour immediately! YUM!

For almost a decade now, Taylor Farms has been awarding college scholarships to deserving students looking to further their academic goals. On Friday June 28, we held this year’s Scholarship Luncheon and awarded 20 students, who are children of active, full-time Taylor Farms employees, with a $5,000 academic scholarship and to date have issued over one million dollars in academic scholarships.
We’ve partnered with Community Foundation for Monterey County for the past two years on the Taylor Farms Scholarship program. This partnership allows our applicants to utilize their online platform to apply for 40+ additional local scholarships instantly that they may not have been aware of. They simultaneously apply for the Taylor Farms Scholarship and any others that they are qualified for. This year three students won additional scholarships through the Community Foundation of Monterey County this year.
