Veggie Frittata
What you’ll need...
  • 6 large eggs
  • 2 large egg whites
  • Coarse salt and ground pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 cup medium red onion, finely chopped
  • 1 cup grape tomatoes or cherry tomatoes, halved
  • 1 cup diced bell pepper
  • 1/4 cup crumbled soft goat cheese
  • 1/2 cup ham, cubed
  • 3/4 cup spinach, chopped
  • Salt & pepper

Combine all ingredients from stove top with the egg mixture into a large Pyrex dish. Bake for 25-30 minutes until eggs are set. Turn oven to broil and continue to cook, about 2 minutes, or until top is nicely golden browned and remove from oven.

Carefully run a rubber spatula around the edge of the pan to loosen the frittata and slip it out onto a large serving platter.
