Shrimp Butter Cups
What you’ll need...
  • 1 pound medium shrimp, peeled, tailed and deveined
  • Crackers
  • 2 cups butter lettuce
  • ¾ cup mayonnaise
  • ½ cup dill pickles, finely chopped
  • 2 tablespoons fresh tarragon, chopped
  • Salt & pepper

In a small bowl, combine the mayonnaise, pickles, tarragon, and ¼ teaspoon each salt and pepper.

Rinse shrimp and set aside in colander

Begin assembling by taking one cracker and layering on butter lettuce, tarragon sauce and then topping with two shrimp.

Repeat roughly 20 times or until ingredients are gone.
