Salmon Lox Breakfast
What you’ll need...
  • 2 bagels
  • 8 tablespoons cream cheese
  • 8 oz. salmon lox
  • 4 eggs
  • Salt and cracked pepper
  • ½ cup chives, washed and sliced

To poach eggs, begin by spraying your egg poacher cups with cooking spray. Fill your egg poacher pan with 1 inch of water and crack an egg into each of the four cups. Once water has come to a boil, turn heat down and cover eggs for 2-4 minutes depending on desired doneness.

Meanwhile toast bagels and place inside of bagels up on two plates. Spread about 2 tablespoons of cream cheese on each bagel half, top with salmon, add poached egg on top and sprinkle with salt, cracked pepper and chives.
