Green Bean & Tomato Salad
What you’ll need...
  • 12 oz. green beans, washed and trimmed
  • ½ cup shallots, thinly sliced
  • ¼ cup chives, thinly sliced
  • 2 cups cherry tomatoes, assorted colors
  • 1 tablespoons extra-virgin olive oil Salt and pepper to taste

Place shallots and olive oil in a cold skillet and place over medium heat.  Cook about 3 minutes or until shallots begin to turn golden brown. Remove skillet form burner.

Meanwhile, wash and halve cherry tomatoes.

Steam green beans in the microwave according to package instructions.

Empty green bean package, shallots from skillet and tomatoes into a mixing bowl; place in refrigerator for 1 hour.
