Greek Salad
What you’ll need...
  • 2 Roma tomatoes, sliced
  • 2 cups sliced cucumber
  • 1/4 cup pitted kalamata olives, halved
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons chopped fresh Italian parsley
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 cup crumbled feta cheese
  • 4 cups salad greens

Toss first 8 ingredients in medium bowl and blend. Gently mix in cheese. Season with salt and pepper and let marinate for 20 minutes. Distribute lettuce evenly on plates, top with mixture and serve.
