Ginger Pork Salad
What you’ll need...
  • ¼ cup soy sauce
  • 2 tablespoons white vinegar
  • 1 tablespoon water
  • 1 teaspoon sesame oil
  • 1 green onion, thinly sliced
  • 2 tablespoons fresh ginger, grated
  • 2 pound pork chops, think- cut and pounded to roughly 1/8 inch thickness
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 6 cups butter lettuce
  • 1 bunch cilantro, washed and chopped
  • 3 cups carrots, shredded
  • 2 cucumbers, 3 inch matchstick cut

Begin whisking together the soy sauce, vinegar, water, sesame oil, scallion, and 1 tablespoon of the ginger to make the ginger dressing. Set aside. 

Heat broiler to high. Brush both sides of the pork chops with the olive oil; then sprinkle with the salt and the remaining ginger. Broil 2 minutes on each side. Cool and slice thinly.

 Blend the butter lettuce leaves with cilantro, carrots, cucumbers, and sliced pork. Drizzle with the ginger dressing and toss. Top with pork chops and serve.
