What you’ll need...
  • 3 cups leafy romaine
  • 3 cups spinach
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion, thinly sliced
  • 1 ripe avocado, sliced
  • Extra-virgin olive oil Balsamic vinegar
  • Salt & pepper to taste

In a large salad bowl, blend leafy romaine and spinach. Add tomato, onion, and avocado. Lightly dress salad by drizzling olive oil and balsamic vinegar. Toss, add salt and pepper to taste and serve.
